Happy shortest month of the year!

So how many of you are anticipating a snowstorm to an epic level? No snow in NYC as of yet, but according to the weatherman, we are anticipating freezing rain. Mr. Weatherman, if your predictions are wrong once again, you will be called "the boy who cried wolf".

My friend Amber told me about a simple fish recipe that is easy to make and delicious to the taste. I made a few minor tweaks, and voila! I think I will be cooking fish more often.

Mahi Mahi from Trader Joe's.

Onion, mayo, garlic, salt, and pepper mix.

Mahi Mahi drizzled with lemon, dipped in the mayo mix and coated with Panko bread crumbs.
Cooked at 425F for 25minutes on each side.

Crispy and light, and perfectly paired with white wine!

  1. Mmm...I'm going to have to try that recipe! I don't eat enough fish. Hehe...I like how you dressed up the plate w/ lettuce and cilantro/parsley. ;)
